In response to COVID, they didn’t bottle the 2020 at the normal time. As we might remember, those early days of the pandemic in neighboring Italy were a little intense. Eventually he decided to bottle, but given the extra élevage, it needed a little something. For the first time ever, Zaria is a NV cuvee of 2018, 2019, and 2020. Zaria translates to ‘dawn,’ and in this case, represents the new dawn of an ancient wine culture that was lost during the 1950s. The whole process from grape to bottle is also strongly connected to the phases of the moon. This is a co-fermented field blend of Pinela, Malvasia, Laška Riesling, Zelen and Vitovska. In addition to over a month of maceration before being aged in Slovenian barrels for 22 months, there’s also a healthy dose of botrytis fermented dry as well. A killer pairing wine, Miha often thinks it can stand alone as its own course.
